This recipe can be made into bread bowls, rolls or two loaves of bread.  I grind my own wheat, but if you don’t have access to whole wheats or have a grinder, then simply use the best whole wheat flour you can find.   I also start my dough in a bread machine but it can also be done in an electric mixer.  Just make sure it is mixed and kneaded well.

Homemade Whole Wheat Bread Bowls

Equipment

  • grain mill/grinder for wheat
  • bread machine or electric mixer
  • baking pan with sides

Ingredients

  • 1 1/2 cups warm water
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1 egg stirred
  • 4 1/2 cups whole wheat flour
  • 2 tsp salt
  • 2 Tbsp Lecithin
  • 1 tsp gluten (optional)
  • 1 Tbsp active yeast

Instructions

  • If you are using an electric mixer, Mix water, oil, honey, salt and egg together
  • Add lecithin, gluten, half of the flour and mix thoroughly
  • add yeast and enough flour to make a soft dough
  • knead until smooth and elastic (5-6 minutes). Let it rise for 30-40 minutes.
  • IF YOU ARE USING A BREAD MACHINE, select the setting for "Dough" only which does the mixing and kneading for you. Then add all the ingredients in the order given and press START. Then remove the dough from the machine and continue with these instructions.
  • Shape the dough into 4 round bowls and place in a baking pan with sides so they will rise up instead of out. (or place in 2 loaf pans) Cover with a cloth and let rise for 45-60 minutes.
  • Preheat oven to 350 degrees.
  • Bake risen bread for 25-30 minutes until crust is formed on top and inside is done.
