Easy Strawberry Fig Jam

This jam is made with figs and strawberry jello. Tastes just like strawberry jam!

Ingredients

  • 6 cups smashed figs (ripe or slightly under ripened)
  • 4 cups granulated sugar
  • 2 boxes 6 ounce size (large box) of strawberry jello

Instructions

  • Prepare your jars and lids and rings by washing in hot soapy water.
  • Cut stems off figs and place figs in a large bowl
  • Using a potato masher, smash the figs to about halfway smashed.. This leaves some chunks that will taste like big pieces of strawberry.
  • Pour sugar and jello over the smashed figs and stir well
  • Place fig mixture in dutch oven and turn on heat
  • Bring to a rolling boil (cannot be stirred down) and time for 10 minutes
  • Pour into jars and place lids and rings on tightly.
  • Seal in a hot water bath, then place on a towel on the counter, making sure that the lids go flat and seal completely as the jars cool.
