The most moist and delicious Banana Nut Bread ever!  Use really ripe bananas and good ole Georgia pecans!  These loaves make great gifts and you can freeze them to have on hand when you need them!

  • 4 small loaf pans

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 5 or 6 super ripe bananas, mashed
  • 2 cups all purpose flour
  • 1 1/2 tsp salt
  • 1 tbls baking soda
  • 1 cup buttermilk
  • 1 cup chopped pecans or walnuts

Instructions

  • Preheat oven to 300 degrees. Grease loaf pans
  • beat the sugar & oil together in mixer
  • add eggs & bananas and mix well
  • in a separate bowl stir flour, salt & baking soda together
  • then add flour mixture to the banana mixture alternating with the buttermilk
  • add the nuts last
  • Pour into 4 small loaf pans (or 2 large loaf pans). Place pans on a baking sheet for stability and bake in preheated oven at 300 degrees for 30 minutes. Then cook for another 30 minutes at 350 degrees. Test for doneness. Large loaf pans might need a few more minutes. (The loaves will be a dark brown color)
  • Remove from oven and cool completely before placing in freezer or refrigerator.
  • Slice and enjoy! Delicious when warm too!
