Finishing up my Grandmama’s Sweet pickle recipe video. I have been filming it in steps over the past 3 days. It sounds like a lot of work but it really is easy and they are so delicious! I use them in my potato salads and deviled eggs.
My mother got the recipe from my grandmother when I was just a child and these were the only sweet pickles we ever ate. However, sometimes my mother would pickle sliced green tomatoes or chunks of watermelon rind instead of cucumbers. We loved all of them! The recipe looks more difficult than it really is. It just takes some time to get them completed, that’s all. Y’all enjoy!
Sweet Pickles
My Grandmama's Sweet Pickle Recipe handed down by my mother.
Servings 8 pints
Equipment
- Large pots and pans, canning jars (quart & pint), lids
Ingredients
- 12 lbs cucumbers Small pickling type
- 4 1/2 cups pickling lime
- 1 1/2 gallons water
Pickling syrup
- 5 lbs sugar
- 2 pints white vinegar
- 1 stick cinnamon sticks
- 1 tsp whole allspice
- 1 tsp whole cloves
Instructions
- Dissolve lime into water in large roasting pan
- add sliced cucumbers
- let soak for at least 24 hours, stirring occasionally to unsettle the lime.
- on 2nd day, remove from lime water and rinse thoroughly in batches
- pour out lime water and rinse the roasting pan.
- Add clean water to roasting pan and then add cucumbers back in the water to soak for at least 4 hours.
- then mix the sugar, vinegar and spices (in a tea ball or spice bag) and bring to a boil.
- remove cucumbers from the rinse water in roasting pan and place in a deep cooking pot. Cover with the hot pickling syrup
- (If there isn't enough pickling syrup to cover, you can make another batch of it)
- Place a top on the pot and let the cucumbers sit in the syrup overnight.
- On the 3rd day, boil for 1 hour until the cucumbers become translucent. Place in prepared canning jars and process in hot canning bath. Set aside to cool and listen for lids to pop down as they cool and seal.

You are so welcome. We have loved these pickles since childhood when my grandmama used to make them. I never had store bought pickles until I was grown and out on my own. Love these homemade ones so much better!

Do these remain crispy even though you boil them?
Yes, they do and they are delicious! Worth the 3 days it takes to make them.
