This broccoli soup is so creamy and cheesy, it is perfect for warming up on a cold day and is the ultimate comfort food.  Whether you serve it in a cup or a bread bowl, it won’t take much to fill you up.   I served it in a homemade bread bowl (separate recipe) which made it extra filling and yummy!  This is the soup to make if you are short on time, too, because it can be made start to finish in under an hour!  Y’all enjoy!

Creamy Cheesy Broccoli Soup

Ingredients

  • 8-10 oz fresh broccoli florets (approximated 4-5 cups)
  • 1/2 cup chopped onion
  • 1/2 stick butter (1/4 cup)
  • 1 tsp minced garlic
  • 1 large carrot, chopped fine
  • 3 cups chicken broth
  • 2 cups half n half creamer
  • 2 bay leaves
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground nutmeg
  • 1/4 cup cornstarch
  • 1/4 cup chicken broth or water
  • 2 1/2 cups shredded sharp cheddar cheese

Instructions

  • melt butter in dutch oven and saute onions and garlice until soft for about 4-5 minutes
  • add broccoli, carrots, chicken broth, half n half cream, salt, pepper, bay leaves and nutmeg. Bring to a boil and simmer about 12 minutes until broccoli is very tender.
  • Remove bay leaves from the pot.
  • stir cornstarch and 1/4 cup of chicken broth (or water) together until smooth, then add it to the broccoli soup stirring constantly until thickened (about 2-3 minutes).
  • Gradually stir in the shredded cheese until completely melted.
  • Serve in cups or bread bowls. Can be topped with crumbled bacon, extra cheese and pepper.
