Roasted Cauliflower

Spicy but not too hot cauliflower flowerets roasted on a sheet pan

  • 1 sheet pan
  • 1 Parchment Paper
  • 1 large bowl
  • 1 small bowl

Ingredients

  • 1 head cauliflower
  • 1/3 cup avocado oil
  • 1 tsp minced garlic
  • 1 1/2 tsp ground cumin, ground coriander, & smoked paprika
  • 1 tsp cinnamon, salt, & ground turmeric
  • 1/2 tsp ground cardamom & black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  • Cover sheet pan with parchment paper. Divide cauliflower into florets and place in large bowl with a lid
  • In small bowl, combine avocado oil, lemon juice and all the spices with a whisk.
  • Pour the oil/spice blend over the cauliflower, cover with lid and toss until well coated. Let it sit for about 20 minutes. Preheat oven to 400 degrees.
  • Spread the florets onto the parchment paper lined sheet pan in a single layer. Place in oven and bake for approximately 30 minutes.
  • Remove from oven and drizzle with the 2 Tbsp of olive oil. Serve warm. Enjoy!
