Easy Strawberry Cake

Equipment

  • electric mixer
  • 2 Cake Pans 8" round
  • Chop fresh strawberries & mix with a little bit of sugar to create juice or purchase frozen sweetened strawberry package & thaw it.

Ingredients

CAKE

  • 1 box strawberry Jello (3 oz size)
  • 1 box white cake mix
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1/2 cup sweetened chopped strawberries with juice
  • 1/2 cup water

ICING

  • 3 1/2 cups confectioners sugar
  • 1/2 stick butter
  • 1/2 cup sweetened chopped strawberries with juice

Instructions

  • Preheat oven to 350°
    Spray cake pans with baking spray

CAKE

  • In mixer, combine the white cake mix and strawberry jello together on lowest speed.
  • Add the oil & water and beat 2 minutes
  • Add the eggs and then the strawberries. Beat well.
  • Pour batter into 2 round cake pans.
  • Bake for 20 to 24 minutes. Do not let it get too dry. Cool cake completely before icing.

ICING

  • Beat confectioners sugar with softened butter and strawberries until smooth.
  • Ice the cooled cake.
