This Strawberry Cake recipe is a family favorite at every celebration. My granddaughters especially love it and ask for it on their birthdays. It can be made into cake layers or cupcakes. The icing is super sweet and delicious! Since the recipe uses 1 cup of sliced strawberries, I usually slice up a carton of strawberries, add about 1/4 cup of sugar and stir them until the sugar is melted creating a bowl of nice juicy strawberries. Then I measure out 1 cup and place in freezer bags and put in my freezer until the next time I need to make this cake. The sweetened strawberries are also delicious to use when making strawberry shortcakes with whipped cream on top! Just sayin… we love strawberries! How about you? Y’all enjoy! Love, gg
Easy Strawberry Cake
Equipment
- electric mixer
- 2 Cake Pans 8" round
- Chop fresh strawberries & mix with a little bit of sugar to create juice or purchase frozen sweetened strawberry package & thaw it.
Ingredients
CAKE
- 1 box strawberry Jello (3 oz size)
- 1 box white cake mix
- 4 eggs
- 3/4 cup vegetable oil
- 1/2 cup sweetened chopped strawberries with juice
- 1/2 cup water
ICING
- 3 1/2 cups confectioners sugar
- 1/2 stick butter
- 1/2 cup sweetened chopped strawberries with juice
Instructions
- Preheat oven to 350° Spray cake pans with baking spray
CAKE
- In mixer, combine the white cake mix and strawberry jello together on lowest speed.
- Add the oil & water and beat 2 minutes
- Add the eggs and then the strawberries. Beat well.
- Pour batter into 2 round cake pans.
- Bake for 20 to 24 minutes. Do not let it get too dry. Cool cake completely before icing.
ICING
- Beat confectioners sugar with softened butter and strawberries until smooth.
- Ice the cooled cake.
