This salad recipe was given to me about 40 years ago when I had teenagers at home before Taco Salad was popular & served everywhere.  It was a big hit with my kids and I loved it because it served so many hungry mouths.  I fed the Youth Group from Church by just doubling the recipe once!  And the thing that  is super great about this recipe is that some of the ingredients can be substituted with others, depending on what is in your pantry or what someone doesn’t like.

I usually make the ingredients in separate mixing bowls and then combine them in a really large bowl if serving a crowd.  If I am serving this to just a few folks, I only combine the ingredients when ready to serve.  This allows you to save leftovers in separate containers for other uses…such as using the bean/meat/cheese mixture over nachos another day.  Or using the chopped veggies in a different kind of salad.   If the entire salad is mixed together and there are leftovers, the chips and lettuce will get soggy overnight in the fridge.  The dressing is delicious on any salad so I usually just mix it up in a jar and use it as needed.  Try it & I think you and your family will love it.   Y’all enjoy!

Mexican Salad

A great salad for a big family, quick n easy to make too!

Ingredients

  • 1 lb Ground Beef
  • 1 pkg Taco Seasoning
  • 6 green onions (or 1 sweet onion) chopped
  • 8 cherry tomatoes (or 1 large tomato) chopped
  • 6 oz can sliced black olives
  • 1 can garbanzo beans
  • 1 can kidney or black beans drained & rinsed
  • 1 can whole kernel corn optional
  • ½ - 1 lb cheddar or Monterey Jack cheese grated
  • 1 head iceberg lettuce chopped
  • 1 pkg Doritos or other corn chips/strips

Dressing

  • ¾-1 cup mayonnaise
  • ¼ cup ketchup
  • 2 tbsp salsa

Instructions

Meat Mixture

  • Cook & drain the ground beef.
  • add taco seasoning & 1/4 c. water. Cook and stir until all water is absorbed.
  • Cool and place in large bowl.

Toppings

  • Chop the onion, tomatoes & black olives and add to bowl.
  • Drain the beans & corn and add to bowl.
  • Grate the cheese and add to bowl
  • Chop lettuce and add to bowl.
  • Crush the whole bag of corn chips and add to bowl

Dressing

  • Mix the mayonnaise, ketchup and salsa together and add to bowl.
  • Stir all ingredients together.
