What to eat when you haven’t planned your dinner and it is already 5 p.m.?  Forgot to thaw anything from the freezer…no problem.  Just grab that carton of eggs, some cheeses and veggies and get cooking.

I always keep refrigerated pie crust in the fridge or in the freezer (it thaws very quickly) so this meal can be ready for the oven in a jiffy.  It does take about 45 minutes in the oven to cook and then 10-20 minutes when you take it out of the oven for it to cool enough to slice neatly.  That gives you plenty of time to toss together a nice salad to go with it.

  • 1 pie plate
  • 1 skillet

Ingredients

  • 1 each pie crust
  • 3 green onions chopped
  • 1/3 cup vidalia onion chopped
  • 1 tsp minced garlic
  • 6 eggs
  • 1 cup heavy cream
  • 1 tsp salt
  • 1 tsp pepper
  • 2/3 cup chopped bell peppers (green, orange, red or yellow)...mixed colors is fine
  • 1 cup diced ham
  • 2 cups shredded mild cheddar cheese
  • 3 Tbsp butter

Instructions

  • Cook veggies in skillet with butter until tender.
    Mix cream, eggs, salt, pepper with whisk. Add cooked veggies
  • To assemble: Place pie shell in pie plate and flute edges Sprinkle 1/2 ham in pie crust, top with 1/2 of cheese. Cover with half of egg mixture. Repeat layers.
  • Place on a cookie sheet and bake 50 minutes in 350 degree oven. Cool for 15-20 minutes before slicing.
