What to eat when you haven’t planned your dinner and it is already 5 p.m.? Forgot to thaw anything from the freezer…no problem. Just grab that carton of eggs, some cheeses and veggies and get cooking.
I always keep refrigerated pie crust in the fridge or in the freezer (it thaws very quickly) so this meal can be ready for the oven in a jiffy. It does take about 45 minutes in the oven to cook and then 10-20 minutes when you take it out of the oven for it to cool enough to slice neatly. That gives you plenty of time to toss together a nice salad to go with it.

Western Quiche

- 1 pie plate
- 1 skillet
Ingredients
- 1 each pie crust
- 3 green onions chopped
- 1/3 cup vidalia onion chopped
- 1 tsp minced garlic
- 6 eggs
- 1 cup heavy cream
- 1 tsp salt
- 1 tsp pepper
- 2/3 cup chopped bell peppers (green, orange, red or yellow)...mixed colors is fine
- 1 cup diced ham
- 2 cups shredded mild cheddar cheese
- 3 Tbsp butter
Instructions
- Cook veggies in skillet with butter until tender. Mix cream, eggs, salt, pepper with whisk. Add cooked veggies
- To assemble: Place pie shell in pie plate and flute edges Sprinkle 1/2 ham in pie crust, top with 1/2 of cheese. Cover with half of egg mixture. Repeat layers.
- Place on a cookie sheet and bake 50 minutes in 350 degree oven. Cool for 15-20 minutes before slicing.
