Chicken N Rice soup is good for Cold Days and days when you have a Cold or just feel sick.  Sometimes when I’m feeling under the weather with a sinus infection or congestion, all I really want is the broth from the Chicken N Rice (or Noodle) soup.  And of course, when I’m feeling a little bit better, I want a grilled cheese sandwich to go with it.  That’s when I know I’m on the road to recovery.  I hope this post finds you all feeling top of your game and not in need of this soup, but here is the recipe just in case you ever need it.  Y’all enjoy!

Chicken N Rice Soup

Chicken N Rice Soup is great tasting and easy to make.

Equipment

  • Dutch Oven or large soup pot

Ingredients

  • 2 raw chicken breasts (or 2 cups Rotisserie Chicken)
  • 4 celery ribs cut into small pieces
  • 1 onion, chopped
  • 3/4 stick butter
  • 1 tsp basil
  • 1 tsp parsley
  • 1/4 tso poultry seasoning
  • 4 cups chicken broth
  • 1 tsp garlic, minced
  • 1 can cream of chicken soup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup brown rice, uncooked
  • 3-4 cups water to dilute soup to desired consistency

Instructions

  • chop the raw chicken breasts into bite size pieces
  • chop the celery and onion into small pieces
  • melt the butter in dutch oven and add chicken, celery & onion. Saute until onion is tender & translucent
  • add all other ingredients to Dutch Oven. Stir and cover and simmer on low until rice is tender, stirring once or twice and adding water as needed to keep soup thin and not allow rice to stick on the bottom of pan.
  • Serve hot with grilled cheese sandwiches or Ritz crackers. Or just take a big bowl to your sick friend. Y'all enjoy!
