TACO SOUP

This is a quick & easy way to make a delicious Taco Soup to warm you up on chilly days!

Equipment

  • 1 Crockpot or large dutch oven
  • 1 skillet

Ingredients

  • 2 lbs ground beef or turkey
  • 1 chopped onion
  • 1 pkg dry ranch dressing
  • 1 pkg taco seasoning
  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can pinto beans, drained
  • 2 cups chicken broth
  • 1 can petite diced tomatoes
  • 1 can Rotel tomatoes w/chilies
  • 1 small jar taco sauce

Instructions

  • Cook ground beef with onion in skillet
  • Add cooked beef & onion to crockpot or dutch oven
  • Add all other ingredients to crockpot or dutch oven
  • Cook on high in crockpot, stirring occasionally until heated through. The longer it cooks in crockpot the more the flavors blend together. If cooking in dutch oven, cook on low heat, stirring often to make sure it isn't sticking. Delicious served with Southern Cornbread or Nacho Chips.

Notes

This soup was brought to me when I was recovering from surgery in 2019 and I have loved it ever since.  If you don't like spice, you could substitute the Rotel tomatoes w/chilies with another can of petite diced tomatoes instead.
