Coca Cola Chocolate Cake with Icing
This cake is made using Coca Cola in the cake mix and in the icing. It is stirred by hand so no need for a mixer. Delicious and super easy! A real crowd pleaser!

Ingredients
- 2 sticks salted butter (1 cup)
- 1 cup coca cola (not diet coke)
- 3 tbsp cocoa powder
- 2 cups all purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda
- 1 1/2 cups miniature marshmallows
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 2 eggs slightly beaten
Coca Cola Icing
- 1 stick salted butter (1/2 cup)
- 1/4 cup plus 2 tbsp Coca Cola
- 3 tbsp cocoa powdered
- 1 tsp vanilla
- 3 3/4 cup powdered sugar, sifted
- 1 cup finely chopped pecans (optional)
Instructions
- Preheat oven to 350 degrees. Coat pan with baking spray.
- Melt butter, cocoa and cola together in saucepan and bring to a boil, stirring often
- combine flour, sugar and soda in a big mixing bowl
- stir hot cocoa mixture into the flour mixture until well moistened
- add marshmallows and buttermilk and continue stirring
- add eggs and vanilla and stir until all is well blended.
- pour into prepared pan and bake at 350 degrees for approximately 35 minutes until wooden pick inserted comes out clean.
- spread icing on top of warm cake and cover with chopped pecans
Coca Cola Icing
- Combine butter, cola, vanilla, and cocoa in saucepan stirring constantly.
- Remove from heat and stir in sifted powdered sugar until well mixed and glossy
- Pour over warm sheet cake and smooth it out with a spatula.
