I’ve been making this meatloaf for years and it never disappoints. It is great for dinner and then super delicious as a meatloaf sandwich the following day for lunch! Just add a little extra ketchup and maybe a smear of mayo on your bread. Gosh, I’m hungry just thinking about that! Isn’t it crazy that sometimes the leftovers are even better than the original meal. I feel the same way about leftover Corned Beef & Cabbage. Just use the cabbage in a soup but save that leftover corned beef for a delicious Reuben sandwich on Sour Dough bread (I don’t like Rye bread, sorry). And leftover spaghetti is always better the second time around! Much more time for the flavors to meld together! Ok, I’m rambling now on a highway of deliciousness….so I’ll stop. G.G.'s Marvelous Meatloaf
Flavorful Meatloaf made with simple ingredients

Equipment
- 2 medium loaf pans or 1 large loaf pan
Ingredients
- 2-3 lbs ground chuck
- 1 small 6 oz can tomato paste
- 2/3 cup bread crumbs, plain
- 1/2 large white onion, chopped fine
- 1/2 medium green bell pepper, chopped fine
- 1 each egg
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp salt
- 2 TBSP Worcestershire sauce
- 1/2 cup ketchup
Instructions
- Preheat oven to 375 degrees. Spray inside of loaf pans with non-stick spray.
- In a large bowl, mix all ingredients together by hand and shape into two loaves.
- Place loaves in pans and cover with ketchup evenly divided between loaves.
- Bake for 45-60 minute until done. Let cool in pans for 15 minutes before serving.
Notes
This is great served with creamy mashed potatoes!
